Chewy Soft Chocolate Fudge Cookie.

The ingredients:

2/3 cup (about 11 tablespoons) unsalted butter at room temperature
4 eggs
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
2 cups all purpose flour
1/2 cups cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
12 ounces semisweet chocolate (can use regular sized chips)
4 ounces bittersweet chocolate (can use chips here, too)
1 1/2 teaspoons vanilla extract
1 1/2 teaspoon instant espresso powder
1 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips

The method:

1. Preheat oven to 350 degrees.

2. Melt the semi-sweet and bittersweet chopped chocolate in a medium heatproof bowl. You can do this over a simmering pot of water or in the microwave. Do not burn it!

3. Set melted chocolate aside to cool.

4. Onto a piece of parchment, sift together flour, cocoa powder, baking powder, and salt.

5. In a bowl whisk eggs, vanilla and espresso powder until well combined.

6. In a mixing bowl, beat butter until smooth and creamy.

7. Add sugar and beat until light and fluffy (about 60 – 90 seconds more).

8. Add egg mixture and beat until well combined.

9. On slowest speed, gradually add melted chocolate and beat until combined.

10. Still on slowest speed, slowly pour flour mixture from parchment to mixing bowl. Mix only until combined.

11. Add chips and mix only until combined.

12. Cover the dough with plastic wrap and place in the refrigerator at least 20 minutes (it will look and feel something like fudge).

13. Scoop onto parchment lined pans and bake for 12 – 15 minutes (edges will be firm, but center will be soft).

14. Allow cookies to cool on sheets for 5 minutes before transferring to cooling racks.

15. Allow to cool completely before transferring to airtight containers.

Dark Cocoa Fudge Cookies.

Dark Cocoa Fudge Cookies
adapted from Cooking Light

1 c, flour
1/4 tsp baking soda
1/4 tsp sea salt
5 tbsp light butter spread
7 tbsp dark cocoa powder
2/3 c. sugar
1/3 c. pack brown sugar
1/3 c. fat free plain yogurt
1 tsp vanilla

combine dry ingredients in a bowl and set aside

cream butter and sugars with the yogurt and vanilla

add dry ingredients until moistened

drop by level tablespoons full onto parchment paper

bake at 350 for 8-10 minutes or until nearly set in the centers

transfer to wire cooling racks after allowing to cool on the sheet for 2-3 minutes

Toasted Coconut Chocolate Chunk Cookies.

Toasted Coconut Chocolate Chunk Cookies
From Cooking Light

1 c. flaked sweetened coconut
4.5 ounces flour (about 1 cup)
1/2 tsp. baking powder
1/4 tsp baking soda
1/8 tsp salt
3/4 c. brown sugar, packed
1/4 c. butter, softened
1 tsp vanilla
1 egg
2 ounces dark chocolate, chopped

Preheat oven to 350°.

Arrange coconut in a single layer in a small baking pan. Bake at 350° for 7 minutes or until lightly toasted, stirring once. Set aside to cool.

Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking powder, baking soda, and salt in a medium bowl; stir with a whisk until blended. Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Beat in vanilla and egg. Add flour mixture, beating at low speed just until combined. Stir in toasted coconut and chocolate.

Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 10 minutes or until bottoms of cookies just begin to brown. Remove from pan, and cool completely on wire racks.

Oatmeal Pecan Chocolate Chip Cookies.

makes 2 1/2 dozen cookies
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/2 cups uncooked oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoons salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups semi sweet chocolate chips
1 cup chopped pecans

Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment. Beat until creamy, about 3 to 4 minutes. Add eggs one at a time, beating well between each addition. Add the vanilla extract and beat until blended.

Whisk together the oats, flour, baking powder, baking soda, spices and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the chocolate chips and pecans last.

Bake at 350 degrees F for 10 to 13 minutes or until they’ve reached your desired doneness. I like mine a little underdone and cook them for 10 minutes. Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely. Or you could just eat them warm. That’s probably the best idea. Makes about 2 1/2 dozen cookies.
