I have been wanting to have DS try out music lessons – piano, guitar, pocket trumpets or whatever music-related. I believe now is the best time for him to try them out. I tried out piano when I was younger. Unfortunately, my heart wasn’t into it and I was not able to continue. I regret that now but looking back I wasn’t really happy doing that so maybe it was just not for me. I want to give DS the same opportunity and leave the decision to him if he wants to pursue or not. Right now though when asked, he would reply that he wants to take swimming and painting lessons instead. So I will let him be.

Carrot Cake
2 cups flour
2 cups sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1/2 tsp allspice
1 cup applesauce
1/2 cup vegetable oil
6 egg whites
3 cups peeled, grated carrots
1 cup finely chopped nuts (optional)
Mix dry ingredients in mixing bowl. Add remaining ingredients and beat on medium speed for 2 minutes. Spread in 2 greased 8″ round pans. Bake at 350 degrees for 35 minutes, or until toothpick stuck in the middle comes out clean. Cool, then frost with Cream Cheese Frosting (see below).
Cream Cheese Frosting
8 oz cream cheese, softened
1/2 stick butter or margarine, softened
powdered sugar
2 tsp vanilla.
Blend cream cheese and butter well. Add vanilla. Gradually add powdered sugar until desired thickness. Beat until smooth. I like to put chopped walnuts on the top.

This is the peg for DS’ birthday cake. Of course, it’s not alright to copy another person’s work so this will just serve as an inspiration. We will have a small party in his lola’s house, as we always do. This time will be a bit fancier. He will have a themed cake and themed giveaways. He only has a few guests that’s why I can afford to order giveaways. And while browsing for medical uniform and stuff, I try to sneak in some time to check for party ideas that I can make myself. Despite all the big parties we have gone to, I am just happy that DS isn’t asking too much for his birthday. Oh he’s asking for Angry Birds balloons. We can do that.

Vegetarian Pad Thai
Ingredients:
Rice noodles
Peanut oil (for frying tofu)
Tofu
Veggies (peppers, onions, mushrooms)–optional
Egg
Sauce:
Tamarind paste
Brown Surgar
Sambal Oelekecs chili paste
Fish sauce
rice vinegar
Garnishes:
Peanuts
Green onions
Shredded carrots
Cilantro
Bean Sprouts
First, put the noddles in hot (not boiling) water and let them soak
Second, cut tofu into squares and fry it in peanut oil (any oil is okay, provided it can handle higher temperatures). Patience is the key to crispy delicious tofu. Alternatively, you can bake tofu. Cover it in soy sauce, ginger, any other spices you like and then put it in the oven at 350, flipping regularly.
Next, saute any other veggies (peppers, onions, mushroom). Scramble an egg.
For the sauce, mix 3 T. taminind paste (store bought or homemade from tamarind pods), 3 T brown sugar, Sambal Oelekecs chili paste (vary depending on how hot you like it), 3 T fish sauce (quality matters!), 2 T rice vinegar. Stir and taste. Feel free to adjust until it is that perfect combination of sweet, salty, and sour.
Pull the noodles out of the water (they don’t need to be drained, some water helps the sauce), put them into the pan (with the veggies, egg and tofu). Pour the sauce on top, and saute until the noodles are al dente.
Garnish as desired, traditionally with peanuts,bean sprouts, lime wedge, cilantro, extra chili powder,shredded carrots, green onions and anything else that sounds good. The garnishes are really what make this dish, so be generous!

This was our food last New Year’s Eve. And I’m only posting them now. Anyway, I am craving for these right now. All were ordered from Conti’s. And I just love their angel hair puttanesca, so yummy and so light in the tummy, too. The mamonitas and ensaymaditas (not sure if I got them correctly, but they were small mamon and ensaymada) were likewise delicious and not so heavy like most pastries. I don’t think I won’t be needing to read about african mango plus review as we only had a small feast. We are a family of three and these are more than enough for us. We even have leftovers for the next day.

1. Start with ingredients at room temperature, eggs, milk, etc.
2.Take care not to over mix the batter; use a flexible spatula to gently fold ingredients together.
3. Batter should be stiff enough to hold a spoon upright; if it seems runny, gently fold in a few extra tablespoons of flour.
4.Use the freshest spices as possible when they are required.
5.Grease the entire muffin tin, not just the holes. More often than not, the muffins expand over the sides, and if those sides have not been properly greased, you’re going to run into trouble when you try to remove the muffins.
6. Fill muffin tins three-quarters full; the tops are the best part, so don’t be shy with the batter.
7. Slide a baking sheet under the muffin tin to help prevent the bottoms from getting too dark in the oven. This also helps with cleanup in case there is overflow.
8. Take care not to over-bake the muffins.
9. Allow muffins to cool in the pan at least 10 minutes before removing them, especially if they contain soft fresh fruit.
10. Enjoy them fresh. If you must, freeze them, then thaw overnight in the refrigerator and bake the muffins fresh in the morning.

Summer is fast approaching. School is about to end. And sadly I haven’t planned anything yet for vacation. I heard DS’ school is already accepting students for their summer swimming lessons, so I plan to list him up the soonest. I likewise am interested to have him try anything music-related – piano, guitar, voice even and get him one of those Sennheiser Mics I came across recently. But I have to take it slow. I don’t want to burden him with too much activities. I just want him to have fun.

If there’s one thing that I want improved in our humble home, that will be our front yard. I have always wanted to have it landscaped. However, when we had it checked, the landscape will cost us a fortune! Really, I can buy a huge ref or a huge flatscreen with the price. So I am now back to my initial plan – that we will just get nice potted and hanging plants and maybe get a nice garden furniture, too. The plan isn’t so cheap as well so I will buy the plants in batches, maybe at least 2 to 3 pieces each time. And I have to save up for the furniture also.
