Nutella Oatmeal With Sliced Bananas

I am including oatmeal to my daily diet once again. However, I do get tired of having the same old plain oatmeal each and every day. So off I went online checking for easy and simple oatmeal recipes. Luckily I found one and I can’t wait to try this out. I should go easy on the nutella and sugar though. I love sweets, more on the pastries though than candies and chocolate, but still I worry that I might get addicted to nutella. I tell you once I am hooked on something, I have to have it every single day. I might need a non 12 step program or something like that to get me off that. :) Anyway, here’s the recipe for the nutella oatmeal with sliced bananas.

Nutella Oatmeal with Sliced Bananas
{serves one, but easy doubled}

Ingredients
1 cup Whole Milk
1/2 cup Old Fashioned Oats
1 tablespoon Nutella
1 teaspoon Dark Brown Sugar
A pinch of Kosher Salt
Sliced Banana

Preparation
Heat the milk in a small sauce pan until boiling. Reduce heat to medium-high and stir in oats. Keep stirring, and removing from the heat to stop it from over boiling until the oats have absorbed most of the milk. Remove from the burner and stir in the brown sugar and Nutella. Pour into a separate bowl and top with sliced bananas.

Pan-Roasted Chicken With Lemon-Garlic Green Beans.

Pan-Roasted Chicken With Lemon-Garlic Green Beans
Serves 4| Hands-On Time: 15m | Total Time: 1hr 15m

Ingredients
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

Directions
Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.

In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.

Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally.

Serve warm.

Today.

We had a sumptuous lunch in a Korean restaurant. I love the bibimbap, kimchi and seasoned spinach.

Bought two tops and a small bag. This wasn’t part of the plan, though I really wanted to get a small purse – I call it my palengke bag, which will hold my phone, money and other essentials when doing the grocery :D . I got the tops since I don’t want to put to waste all the hours of walking and browsing the store.

Browsed pinterest while waiting in the morning and I never got to do anything because of that. The rv repair that I was supposed to look into was not done. Seriously I can spend the whole day pinning all the pretty images and ideas online.

I just love Pinterest. I am just not sure how long it’s gonna keep me interested though. Anyway, the photo above is just one of my pins. I am saving photos of cakes and cupcakes for future reference. I have been wanting to try making them, but I have yet to complete my tools. I am scouting for a nice, affordable hand mixer. I don’t want to get the ‘real’ mixer since I am still not sure if I’m going to enjoy baking. So I am looking for less expensive items for now and just upgrade later on when I am sure about the hobby. Good thing we are going to go to the mall to get our supply of duracell procell batteries, I might drop by the appliance store to look around.

What I wish to receive this Valentine’s.

- An external hard drive. Why is it so hard to look for a 2TB EHD.
- A Fuji X10 digital camera. I saw this from a friend’s FB and I would love to have my current digicam upgraded.
- A new laptop, toshiba netbooks, dell, or whatever’s nice and not so expensive.
- A new DSLR.
- Lens for the new DSLR.
- A bigger and nicer table for my work area.
- Shopping spree!

These are just my wish list though, and mainly for blogging purposes. ;)

To Juice Or Not.

I have been contemplating on getting a new juicer. We have been juicing carrots and apples before and I thought of going back to the habit. I am just concerned though that the carrots available in the market aren’t organic. And they can be very pricey, too. I learned that carrots and apples, both have too much chemicals and pesticides thus they aren’t actually good for the body. So for now, I decided to just blend pineapples and maybe melons, then add local veggies (I heard that sili, malunggay and saluyot leaves are good for cleansing.) when available. Or when I am too lazy, maybe we can just gulp down some coconut juice. Reading about it, I came across these benefits of drinking coconut juice.

Busy Bee.

I am. No, I don’t have those Oral & Maxillofacial Surgeon Jobs or anything like that, still I feel like there are tons of things to do. But surprisingly I feel better when I have a lot of work. It keeps my mind occupied. Plus I feel like I want to make the most of whatever’s left of the school break. And whether I like it or not I know I have to be more active just so I can lose the extra pounds that I have been gaining over the last couple of weeks. 2012 should be a better and healthier year for us.
