I met with friends today for an afternoon of food and fun. As always I enjoyed meeting with them even if all we did was sit and eat and talk. It was an endless chit-chat from gossips, to kids and even to savings and investments. Most of us have kids so saving for our kids’ future is in our list of top priorities. Aside from investing in various kinds of funds, to buy gold coins is another promising investment product. It is because gold has been known to preserve one’s wealth and purchasing power. Did I mention that we had our small plant box in front of the house landscaped? It was turned into a mini rock garden. I loved it though I think the plants used were a tad small. But the package was cheap, so who am I to complain. They were from Cavite and a neighbor was having their garden landscaped so they went around the street to offer a budget-friendly landscaping package. Just in time as I am planning to replace our old plants outside. Hopefully next time I can have our front yard landscaped as well and maybe add some discount landscape lighting to it too.

Since friends were posting old photos to Facebook, I decided to do the same, too. My scanner is broken though so I just posted the photos that we used for our on-site wedding AVP.
I just realized that most of our lunches were buffet. We love buffet, more than anything. Hahahaha.

It is so timely that I have come across NC health insurance while doing some research on insurance. Some friends are considering getting their families health insurance. Of course, nobody’s hoping that they get to use it but for security and peace of mind, it is a good thing to get. Personally, we are interested in that, too. I hope I get to talk to an agent soon to see if we can squeeze in the premium payments to our income.

5 eggs
1 1/4 cups milk
1 1/2 Tablespoons sugar
1/2 teaspoon salt
16 slices bread (OR slice four 8-inch French rolls on the diagonal)
Heat oven to 500°. Grease several baking sheets. In shallow dish, mix eggs, milk, sugar, and salt. Dip bread pieces in egg mixture and arrange on prepared baking sheets. Bake until underside is golden, about five minutes. Turn slices; bake until golden brown, about 2-5 minutes more. Watch them carefully to prevent burning. Serve with pancake syrup.
If preparing for the freezer, cool completely on wire rack. Place in a single layer on baking sheet and place in the freezer until firm, about 2 hours. Wrap, label, and return to freezer. When ready to serve, place in a 375° oven on ungreased baking sheet. Heat until hot, 8 to 10 minutes. You can simply pop smaller quantities into the toaster or toaster oven.

My flavor of the month. Ever since I tried this, we have been to the resto several times already. You bet I am in dire need of the most effective diet pill from too much eating out. But I think my craving for their food is slowly fading away. Thank God as my monthly budget usually gets ruined because of too much eating out.
Anyway, here’s my current favorite salad. A second favorite, as my vote still goes to Sonya’s.

Roka Salata. fresh arugula, chopped romaine lettuce, sun-dried tomatoes, candied walnuts with shaved parmesan in traditional greek vinaigrette.

Spinach and Artichoke Fondue. With the blend of melting cheese, sliced sun-dried tomatoes and Feta. Served with warm pita triangles and grilled garlic bread.

Yemistes. rice-stuffed peppers and tomatoes.

Kotopoulo Lemonato. greek chicken adobo.

Baklava. layered phyllo with walnuts and orange honey syrup.
We were able to try paidakia, as well. It’s chang-grilled lamb ribs, served with your choice of riced stuffed peppers or Greek roasted potatoes. It is said to be the most popular from their menu, but we didn’t like eat. I told you, I am not a fan of meat. I was able to try their new leonides pasta. The veggies in the pasta are yummy, but I didn’t like the pasta as a whole. Too much sauce and too oily for me. But of course, I am no food critic. I just like to eat.
Anyway, we don’t normally order this much. Roka salata and spinach and artichoke fondue are more than enough. And oh don’t forget their home-brewed iced tea and fresh lemonade. Yum!

I tried drinking milk a week ago, mainly for my calcium supply. I tried the one that is said to be loaded with calcium. And sadly, my tummy wasn’t able to take it. I used to take milk before but with cereals usually and my tummy never had bad reactions. It must be the milk as it was really thick and sweet. Anyway, so much for the milk. I think I’d rather take calcium tabs instead in addition to my daily supply of vitamins. It is not always fun to be healthy.
