I have been munching on chips and brownies and cookies, and I am drinking softdrinks, as well. Good thing, DS helped me finish off my big bag of chips. DH isn’t much help either as he bought some vanilla ice cream today, which goes perfectly with the fudge brownies from Becky’s Kitchen. So much for dieting and eating right. Can someone tell me what is the best fat burning supplement? I will be needing it, or I need to stop this eating spree.

1 pound snapper
2 tablespoons olive oil
1/2 cup diced onions
2 cloves of minced garlic
1/4 – 1/2 teaspoon crushed red pepper flakes
1 tablespoon lemon zest
2 teaspoons orange zest
1/3 cup kalamata olives
1 14.5 ounce can diced tomatoes
2 teaspoons chopped dill
2 teaspoons chopped chives
1 tablespoon chopped parsley
salt and pepper
Heat a large frying pan/skillet on medium-high and add the olive oil. Season both sides of the snapper with salt and pepper then add to the hot olive oil and cook for about 3 minutes on each side (you want the snapper slightly undercooked). Remove the snapper from the pan and set aside.
Turn down the heat to medium and add the onions, saute until transparent (you may need to add a little more olive oil if the pan is dry). Add the garlic and red pepper flakes then saute for 30 seconds (be careful the garlic does not burn). Next, add the lemon and orange zest, olives and can of diced tomatoes. Use a wooden spoon or similar to scrape the bottom of the pan.
Allow the sauce to come to a simmer, add the herbs then taste for seasoning, you may need to add a bit of salt and pepper.
Add the fish back into the pan to complete cooking and warm up (about 1 minute), then serve immediately with a spritz of lemon juice on top and garnish with extra herbs if desired.

I am regularly doing a decluttering and organization in the house. For some reason, I can’t seem to get rid of all the mess around. It doesn’t help that we have a very active kid who can’t get enough of books, and demands that he buys a book or two whenever we go to the mall. Needless to say, books abound in the house. But it’s all good.
It’s all the useless stuff lying around that bothers me. We have this big can of old coins that we can’t let go of as we are not sure if they are worth something. So I decided to search on the internet and came across United States Gold Bureau. And I have learned that gold coins and bullion, and even other precious metals, are very good forms of investment. And this has been recognized for centuries already. Not only that, gold can also be used to protect one’s wealth and purchasing power. So yes, I am contemplating to buy gold bullion and coins.

This is an old photo, but I had this very same thing, brownies topped with vanilla ice cream, for dessert tonight. Yum but not-so-good for the diet.
