Dark Circles.

How do you get rid of dark circles under eyes? It has been my problem for the longest time, and I have been reading Darkeyecircle.org for cream recommendations. I likewise checked the internet and the most common suggestion was to put cucumber to the undereye area as this will lighten the dark circles. Drinking at least 10 glasses of water a day is said to help, too. Of course, 8 hours of sleep is a given. There’s also rubbing of powdered vitamin E in the area, lemon and tomato juice mixture and a whole lot more. I honestly do not know which one to follow.

This one’s so easy to make. I am a huge fan of easy to prepare and easy to cook meals since I don’t have someone to help me in the kitchen. Thanks to MIL for staying with us for a few days, I got to learn how to make this one.

It’s Greek.

I have been craving for Greek food ever since I saw a feature on Greece on cable. Good thing there’s a Greek restaurant at a mall nearby. So off we went to Cyma two days ago. I had a really yummy salad, the name of which I can’t recall. It has lots of greens and sun-dried tomatoes and walnuts and vinaigrette. The boys had a taste of Greek adobo. I had to try the adobo even if I am a trying-hard vegetarian and I have to say, the chicken meat was so tender and flavorful. I also had bell pepper and tomatoes stuffed with rice and baklava. I am certainly coming back to this resto as I want to try out the other food. I have to tell DH that I need to get this acne lotion ASAP so we can drop by the mall again. And then I can have my Greek food fix.

It has only been days since my last post and yet I can’t seem to remember my blog password. Talk about being so forgetful. Tsk.tsk.

Thanks to my lists, I am able to keep track of my to-do’s, to-buy’s and all the stuff that I need to remember.

And speaking of to-do’s, I think we are almost done with our little projects for the house. If only we have enough budget, I am sure we can have them all completed at once. But we don’t, so little steps. But I doubt if the house projects will ever end as I always am browsing for homes and home ideas. I even got to see this charming Amish fireplace once. Good thing, a fireplace isn’t for the kind of weather that we have or else I will be bugging DH to get one.

And oh, I am having asthma. First in a long while. :(

Make Better Food Choices.

I have found these little changes that we can do to the foods we prepare for the family to maximize nutrition without compromising taste.

Get More Whole Grains
Take a take a look at your cereals, breads, pastas, rice, waffles and any other grain product you have. Claims such as “100% whole grain” with “whole wheat/oats/brown rice” as the first ingredient are what you want. Be wary of claims such as “made with whole grain” which only requires that 10% of the product contain whole grains.

Lower the Sugar

Focus on Fat

Animal fats including butter, cream, full fat dairy products and high fat meats are high in saturated fats, which has been linked to heart disease. When possible, lower the fat of animal products by choosing fat-free or low fat milk, yogurt and cheese and lean cuts of meat. On the other hand, fats contained in vegetable sources are beneficial for health, including olive/canola oil, avocados and nuts and seeds. When possible, choose items with canola and olive oil, which are low in omega-6.

Check the Sodium
An occasional high sodium food or meal is not a problem, it’s the total sodium consumed over time that matters. So check the labels and try out reduced/low sodium products when appropriate.

Include Super Foods
Fruits, vegetables and beans (black, kidney, garbanzo and northern) top the list of super foods. Dietary Guidelines recommend Americans get 3 cups of beans per week because they are nutrition-packed and include protein, antioxidants, fiber, iron and B vitamins.

Colorful vitamin C-rich fruits such as strawberries, kiwi, cantaloupe and oranges help increase the absorption of iron at meals while blueberries, blackberries and cranberries pack an antioxidant punch.

Don’t forget vitamin A-rich dark green and orange veggies such as spinach, kale, carrots and butternut squash.

If there’s one show that I avoid watching, that will be the news. Life as it is can be stressful. I don’t want to add more stress by watching bad news. TV time should be entertaining, shouldn’t it? Big Brunch Tomato Eggs.

This is what we’ll be having for breakfast tomorrow. That is, if I wake up early. :)

2 tablespoons of olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
400g tin of chopped tomatoes
A good handful of spinach, roughly chopped
A small handful of basil, roughly chopped
4 large free range eggs
A little grated Parmesan cheese to serve
A generous pinch of sea salt and black pepper

In a large frying pan heat the oil and fry the onion and garlic slowly for 7-10 minutes until soft but not coloured.
Add the chopped tomatoes and simmer for 10 minutes or until the sauce thickens.
Stir through the basil and spinach until it has wilted.
With the back of a spoon make four wells in the sauce and then crack the eggs in.
Cook the eggs in the sauce until the white is cooked through and the yolk is still soft.
Season with sea salt and black pepper and a good sprinkle of Parmesan cheese.
Serve the eggs in tomato sauce on top of some crispy crusty bread for a hearty brunch!

Pretty.

I love, love these plates. I am actually in search of plates with pretty prints to hang in our dining room wall. It was actually DH who thought of the idea. Our dining room wall is so bare, I am having a hard time thinking of what to put in there. I would sometimes think that DH actually has more interesting design ideas than I.

Second Home.

Although we have a home of our own, I am still fond of going to open houses and visiting new subdivisions and villages. I certainly hope that in the future, we can get a second home. Even in the internet, I do check for houses and properties for sale. I do enjoy looking at such properties and I would actually think that we can afford to purchase them. One site that caught my attention is the Tamarindo Real Estate. Tamarindo realtor sells properties in the Pacific side of Costa Rica. Condos and homes are currently being built in this pretty, small beach town of Tamarindo. Imagine living near the beach, this is surely a paradise. If only we can afford it, I will surely love to live in there.
