Oats.

I try to have oatmeal for breakfast, but there are times that I get tired of eating it plain. Good thing I came across these five ways to eat oats from TheKitchn. Finally I can variety in my oats.

1. Steel-cut! – Really, the only way to eat oats for breakfast. The non-flattened, steel-cut oats, soaked overnight in hot water and cooked up in the morning into pearly, chewy grains of utter whole-grain nirvana.

2. Raw, as muesli – Muesli (real muesli, not the boxed sort) is just rolled oats soaked in milk all night. Really nutritious and delicious, and takes zero work. Unless you count pouring milk as work, in which case, we cannot help you.

3. In DIY instant oatmeal packets – Make your own instant oatmeal packets and quit buying sugary stuff from the store.

4. As bread – Oatmeal bread is nutritious, marvelously good as toast, and just is an all-round good thing.

5. In a cookie – Yes, just had to sneak in these oatmeal monster cookies, chock-full of peanut butter and chocolate bits. You have to reward yourself for eating healthy sometimes, right?

Under The Weather.

It does look like I am coming down with something. I just can’t afford to be sick right now as I have several things that I badly need to accomplish. So as early as yesterday, I have been taking double doses of vitamin C in addition to my usual vitamins. I wonder if I should have my vitamins changed soon as I have come across womens vitamins. Since a woman’s body has different needs than that of a man, they created vitamins specially for us. I will bring this up on my next visit to my doctor.

Veggies Storage Box.

I have been looking for a small, pretty basket to store my onions and garlic. I came across this vegetable storage box from thekitchn.com and this seems like a really good idea. I do keep a stock of too much carrots and this box will be so useful. If only I can find a similar box from where I am. Aside from that, I also do need to search for the best night cream out there. My skin badly needs to be taken cared of.

Low Fat Oatmeal Banana Bread.

1 1/4 cup all-purpose flour
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
3 tsp canola or walnut oil
1 large egg, beaten
2 medium egg whites, beaten
3 large bananas, ripe
1 cup uncooked old fashioned oats

Preheat oven to 350°F. Grease and flour a loaf pan and set aside. In a large bowl, stir together dry ingredients including the oats and cinnamon.

In a smaller bowl, mash bananas with a potato masher or fork. Add oil and whole egg and mix thoroughly.

Add the wet ingredients to the dry and mix well. Batter will be fairly thick.

In a medium sized bowl, with an electric hand mixer, beat the egg whites until medium stiff peaks form. Fold the egg whites into the batter in three additions.

Pour batter into pan and bake until top of loaf is firm to touch, 45 to 50 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice loaf into 10 equally sized slices.

High Fiber Foods.

1. Legumes & Lentils: Dried beans, peas and other legumes including baked beans, kidney beans, split peas, dried limas, garbanzos, lentils, pinto beans and black beans. Green beans, snap beans, pole beans, lima beans and broad beans

2. Dried fruit such as figs, apricots and dates

3. Fruits like raspberries, blackberries and strawberries, cherries, plums, pears, apples, kiwi fruit, guava, banana. Pears contain more fiber than prunes.

4. Vegetables like Fresh or frozen green peas, broccoli, Brussels sprouts, Sweet corn, beet root, baked potato with the skin, carrot

5. Greens vegetables including spinach, beet greens, kale, collards, Swiss chard and turnip greens.

6. Nuts such as almonds, Brazil nuts, peanuts, pistachios, and walnuts (Nuts are also high in fat content.). But pistachios are the lowest in calories and fat of all nuts, and a one-ounce serving has three grams of fiber.

7. Whole wheat and barley products

8. Rye, oats, buckwheat and cornmeal

9. Coconut (this is also high in saturated fat).

I was searching for foods high in fiber and I came across the list above from fatfreekitchen.com. We indeed get a lot of benefits from including fiber in our diet, like lowering cholesterol, weight loss management and it can even be a cure for hemorrhoids. So better include fiber in our daily diet and let’s start eating healthy.

Lemon Garlic Chicken.

Another recipe I will be trying soon.

Ingredients:
1 package of chicken thighs & drumsticks (4 thighs & 4 drumsticks)
3 lemons
15 cloves of garlic, peeled
Salt & pepper to taste
2 tablespoons fresh thyme leaves

Preparation:
Preheat oven to 375 degrees F.

In a bowl, add the chicken pieces. Slice the lemons in half and juice them. Add the juice and the lemon rinds to the bowl, along with the garlic, salt, pepper, and thyme. Mix well with your hands, then dump this all in a large baking dish.

Put the dish in the oven and bake the chicken for 30 to 40 minutes, basting every 10 minutes. When the skin gets crispy and the meat is cooked through, it is done.

Disney and Shopping.

We watched Disney on Ice last January 3 at the Araneta Coliseum. I never realized that getting good seats for the show was so difficult. No more front row seats and it took me forever to get our lower box seats. I bet booking rooms in a cancun hotel at bookit.com is so much easier. Anyway, we were there a bit early so we went around Gateway Mall first. Rustan’s was having a sale that time and I was able to grab a really cute red Kuhn Rikon paring knife, Rostfrei chef’s knife, wooden spoons and the forever-on-my-wishlist wooden chopping board. And that is after I made a decision to lessen shopping to save more this year. Tsk. tsk. But it’s for the house so it wasn’t so bad, right?

Exercise More.

That’s one of the things that I really want to accomplish this year, aside from saving enough funds to finally experience cross country moving. I have been exercising on and off the past year. Too bad, I wasn’t able to keep the routine.

Anyway I came across these tips to make 2010 the year to get in shape.
1. Define your goals.
2. Find others who share those same goals.
3. Figure out what works for you.
4. Set a time and a place.
5. Record your progress.
6. Don’t expect perfection.
