We have been frequenting Kanin Club again as I have been craving for their sinangag na sinigang. I just love their version of sinigang mixed with fried rice. All the vegies are mine, while the pork is for DH. Next year though, I promise to minimize our frequent dining out as we do need to save up for our future goals, a dream house, my dream {and very affordable} vehicle, a cheap auto insurance included, and of course fund for DS.

Had a mini get-together with my closest friends from college. This was supposed to be a meet-up with our other batchmates but they never showed up. It was fun though. We had a buffet dinner at Dad’s and it was indeed so hard avoiding all those yummy food. While I was successful getting away from the fatty foods, I wasn’t able to resist their yummy bibingka and puto bumbong.

I am slowly getting my Flickr photos updated while I browse for Mopar performance parts for DH. Since I have a food blog, I try to take photos whenever we eat out. This is frozen yoghurt from White Hat.

I love love their yoghurt. I usually order it with cheesecake, but this time we tried it with cashew since I am craving for cashew. I like it more with a crunch. It is quite expensive though to have everyday, so I am fine with grocery-bought yoghurt on ordinary days.

Back up your digital system to protect from loss or damage. If it’s not backed up, you run the risk of losing everything when your hard drive fails. And, as we all know, there are two types of hard drives — those that have failed, and those that eventually will.
I was going through the blog feeds I’m subscribed earlier and this reminded me that I need to have my digital files organized and backed up the soonest. Very timely since it’s Christmas break and I have some free time to really look into various online backup options available. Thanks to NextAdvisor, it made my search a whole lot easier.

I have been stressed lately. I really want a break from all of these. A Cancun All Inclusive vacation will truly be a treat for me. I don’t swim but I do love the beach. A getaway at a secluded white-sand beach with all the indulgences is a dream. Karisma Hotels offers such luxurious accommodations. If you are a foodie, you are sure to have a dining experience that is of the same standards as the best, high-end restaurants out there. Of course, their hotels and resorts are something to look forward to. They have really beautiful beaches and you are sure to get pampered with all the services and indulgences they give to their guests.

It’s the start of my son’s Christmas school break. There are just too many things to do in the house. I hope I can finish all of them during the break. I think I need to declutter my son’s shelf once again as his books are already overflowing. It makes me tired just thinking about the things I need to do.

I saw spinach being sold at the grocery. I would love to buy and try cooking with it, but I don’t know any spinach recipe. I’m glad to have across this recipe and I will try this one soon.

Frittelle di Spinaci
- Makes 8 to 10 fritters, depending on size -
Ingredients
1 pound fresh, mature spinach
1 tablespoon butter
1 tablespoon olive oil (not extra-virgin) plus more for frying the fritters
1 medium shallot, chopped
1/4–1/2 cup of fresh mixed herbs, such as parsley, thyme, basil, oregano, sage, chives or marjoram (this amount can vary according to your preference)
2 large eggs
1/4 cup all-purpose flour
1/2 teaspoon freshly grated or ground nutmeg
3 heaping tablespoons grated Parmigiano-Reggiano or Pecorino Romano cheese
Salt and freshly ground pepper to taste
Procedure
1. Separate the spinach leaves, removing most of the stem portion. Wash the spinach thoroughly by immersing it in a tub or basin of cold water; agitate it and let it sit for a few minutes, then gently lift the spinach out of the water and place it in a colander to drain.
2. Heat the butter and 1 tablespoon of olive oil in a 12-inch heavy skillet over medium heat, and add the chopped shallot. Sauté the shallot gently, stirring until it starts to turn translucent. Shake most of the water off the spinach and add it to the pan, using tongs to turn it as it wilts and cooks. Season the spinach with a pinch of salt.
3. After a minute or so of cooking, the spinach should be wilted and soft. Transfer the entire contents of the pan to a fine-meshed sieve and allow the spinach mixture to drain and cool.
4. In the meantime, finely chop the herbs and set aside.
5. In a medium bowl, whisk the eggs lightly to break them up, then whisk in the flour, nutmeg, cheese and salt and pepper to taste. Mix in the herbs.
6. Turn out the spinach mixture onto a cutting board and run a chef’s knife through it two or three times to coarsely chop it. Add it to the batter and use a spatula to fold everything together.
7. In the same skillet, add enough olive oil to a depth of about 1/8 of an inch and heat it over medium heat until it is hot enough to make a test dab of batter sizzle. Drop tablespoonfuls of batter into the pan, spreading them slightly with the back of the spoon. Fry the fritters 4 or 5 at a time, turning them when they turn light golden brown
8. Drain the fritters on paper towels and serve hot or at room temperature. They may also be reheated in a hot oven, arranged in a single layer on a baking sheet.

I have quite a long list of to-do during the holiday break. I want to do a general cleaning of the house. I want to welcome the New Year with a spotless house. I hope I can accomplish all these and my asthma won’t attack, or else I won’t be able to finish anything. Aside from that, I also need to check my stock of basic medicine and first aid supplies. I am browsing JazzMedical.com and listing the medical supplies I might be needing for the house. It’s nice that JazzMedical.com also has various lifestyle products and not just medical and health supplies. I am able to get my health supplies as well as items for our household.
