I used to not like wearing sunglasses whenever I am out. That despite knowing that more than fashion, wearing sunglasses protects our eyes from the sun. It all changed however when I experienced a terrible migraine a few years back. It was so terrible that I had to stay away from anything bright. And I needed to wear sunglasses even when I was inside the house. Now, I need to have my sunglasses with me all the time as I never want to have that terrible headache ever again. Thanks to eyesave.com I was able to score branded glasses with huge discounts!

Roasted Vegetable Pasta.

Ingredients
Kosher salt
2 small zucchini, halved lengthwise and sliced 1/2 inch thick
1 bunch asparagus, trimmed and cut into 2-inch pieces
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1 small onion, diced
2 cloves garlic, thinly sliced
1 28-ounce can diced tomatoes
1/2 cup grated pecorino romano or parmesan cheese, plus more for topping
9 ounces fresh linguine
1/2 cup chopped fresh basil

Directions
Preheat the oven to 425 degrees F. Bring a large pot of salted water to a boil.

Meanwhile, toss the zucchini and asparagus with 1 1/2 tablespoons olive oil on a rimmed baking sheet; season with salt and pepper. Roast until tender, about 20 minutes.

Heat the remaining 1 1/2 tablespoons olive oil in a large skillet over medium heat. Add the onion; cook, stirring occasionally, until softened, about 8 minutes. Add the garlic and cook 30 more seconds. Increase the heat to medium high, add the tomatoes and simmer, stirring occasionally, 15 minutes. Remove from the heat and stir in the cheese.

Meanwhile, add the linguine to the boiling water and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta and add to the skillet with the sauce. Add the roasted vegetables and the reserved cooking water; toss to combine, then stir in the basil. Divide among bowls and top with more cheese.

Music Shopping.

DH rarely shops for himself. But when he does, it is usually something bigger than my usual shopping loots. And he would need to go from mall to mall. Going store to store in one mall just seems not enough for him. Today he planned to buy voodoo labs. We went to the newly-opened mall this morning, but the traffic and the crowd changed our minds. Good thing, the mall near our place is having a weekend sale. Too bad, DH did not find the one he was looking for. I guess it’s still so much better to shop online instead. Less tiring and less expenses, too.

Offline.

I have been offline for almost a week now. All courtesy of our internet service provider. We got an alternative but it is so slow. I am just checking in to get some work done and to check my emails. On the brighter side, I got to do some offline work so I am still productive. I am likewise doing some organizing, de-cluttering and disposing various items in the house. I found some old books, toys, threaded inserts even. I am once again trying to keep our stuff to a minimum for easier cleaning and maintenance of the house.

Cake Stands and More.

We went shopping a few days ago. I finally found the plates of my dreams. Yes, I am dreaming about plates. Haha. I didn’t buy them though as I want to give it some thought first as they are a bit pricier than the usual plates that I buy. I also saw some pretty glass cake stands, like those above, and some pretty glass containers, like those used on romantic dessert buffet settings. I promise to get some when I get back. DH on the other hand checked out identity stronghold rfid leather wallet and some sunglasses. We both went home happy, he with a pair of sunglasses and I with charms to feed my current obsession.

School Shopping.

I know it’s still summer vacation and school won’t be around until several more weeks. But I am planning to do back to school shopping real soon. I will do it in batches or whenever I see something the we will need for school. That way, it won’t be too heavy on the pocket and less stressful too come rush time. Good thing school supplies are bought from the school bookstore so that’s several items off my list. Our big bag seems to be as durable as the jack georges briefcases, I don’t think we won’t be needing a new one. And that bag has been serving DS for two years now.

Fish in Crazy Water.

Noticed this recipe because of the post’s title, Under The Tuscan Sun. I enjoyed the movie and it did make me want to move to Tuscany. Seriously. Anyway for the recipe.

Fish in Crazy Water

Ingredients
1 1/2 pounds ripe tomatoes—coarsely chopped, juices reserved
1/4 cup extra-virgin olive oil
3 large garlic cloves, very thinly sliced
2 tablespoons minced parsely
1/8 teaspoon chopped fresh red chile, or more to taste
Salt
4 cups water
Four 6-ounce red snapper fillets, skin on
4 slices of grilled sourdough bread

Directions
In a deep skillet that’s large enough for the fish fillets to lie flat without overlapping, combine the tomatoes, olive oil, garlic, parsley, chile, a large pinch of salt and the water. Cover the skillet and bring the water to a steady simmer over moderate heat; simmer for 45 minutes.

Uncover the skillet and boil the liquid until it has reduced by half. Add the fish, skin side up, and cook for 2 minutes. Using two spatulas, gently turn the fillets. Season the fish with salt and simmer until just cooked through.

Put the grilled bread in shallow bowls and arrange the snapper fillets on top. Spoon the broth all around and serve.
